Arborio Rice
Arborio rice is the most commonly used, and easy to find risotto rice in the US. Many Italians believe Carnaroli and Vialone Nano to have a higher quality. Interestingly, Vialone Nano, grown in the Veneto region of Italy, cannot be grown with chemicals and because of it's high starch content, it cooks up more quickly and yields a creamier risotto.
