Yield: 1 cup
- 1 cup water
- 2 cups granulated sugar, preferably cane
- fresh mint
- Boil the water. Add the sugar, reduce heat and stir until completely dissolved. When the mixture turns a pale straw color, turn off heat and immerse 3-4 stalks of fresh mint in the syrup. When liquid cools, strain out the mint and pour into a bottle or jar and refrigerate until needed.
