Yield: about 1 1/4 cups

- 8 oz cream cheese
- 1 medium cucumber
- 3 t finely grated sweet onion (use a zester)
- 1 t dill, chopped
- dash of cayenne
- 1/4 t salt, to taste
green food coloring(not necessary)
- Beat cheese with a mixer until smooth.
- Peel cucumber, remove seeds, finely dice and add to cheese. Add 3 t sweet onion to the mixture, more to taste. Add dill, cayenne, and salt. Traditionally, the spread has a faint green tint to it (add 1 or 2 drops of green food coloring), but this really isn’t necessary.
- Serve as a sandwich spread accompanied by bacon for tea sandwiches; or as a dip for vegetables or crackers.
