Ingredients
- 1 pound mahi mahi
Couscous:
- 1 cup couscous
- 1 1/2 cup water or broth
- 1 T butter
- 1 T olive oil
Salsa:
- 1/2 red onion, chopped
- 16 mixed olives, green & kalamata, chopped
- pint of cherry tomatoes, sliced in half
- 20 basil leaves, julienned
- salt to taste
Directions
- Couscous: Bring 1 1/2 cups water to a boil with butter and olive oil, add couscous. Stir quickly. Turn off heat. Cover with lid and let the couscous absorb the water for 15 minutes.
- Salsa: Mix ingredients
- grill mahi mahi
- To plate, overlap mahi mahi on couscous and cover with salsa
